Whole or ground?
Whole flax seeds pass through largely intact, so most people grind them in a coffee grinder or blender before use. Grinding a week’s worth at a time and keeping it in the fridge works well — ground flax goes rancid faster than whole.
How to use them
- Smoothies. A tablespoon of ground flax blends in unnoticed.
- Cereal, oats and yoghurt. Sprinkle whole or ground.
- Baking. Works in bread, muffins and rusks.
- Egg substitute. One tablespoon ground flax with three tablespoons water, left to thicken for five minutes, replaces one egg in most baking.
Storage
Keep the pack sealed in a cool, dry cupboard. Once ground, store in the fridge and use within a week or two.
