What it is
Turmeric is a rhizome, a relative of ginger, dried and ground to a deep yellow powder. It is the base of most curry powders and has been central to Indian cooking and Ayurvedic practice for thousands of years. Its best-known compound is curcumin.
The black pepper point
Curcumin is poorly absorbed on its own. Piperine — the compound that makes black pepper sharp — substantially improves that absorption, and fat helps too. So: a grind of black pepper, cooked in oil, ghee or coconut milk. Traditional Indian cooking does all three without thinking about it.
How to use it
- Curries and stews. A teaspoon in with the onions.
- Golden milk. Half a teaspoon in warm milk with pepper, cinnamon and honey.
- Rice and roast vegetables. A pinch for colour.
Practical notes
It stains — hands, cloths, worktops and plastic containers. Wipe spills fast and decant into glass or steel. Store sealed and out of sunlight.
